RENEE KOPLAN escaped to the San Juan Islands sight unseen in the fall of 2014 with her little dog Zandie to get away from the big city of Chicago that had been their home for the prior few years. Being a small town girl at heart Lopez appeared to be the right fit, and it soon became obvious how well suited the island would be to her lifestyle. After trying out a few local jobs, the bakery business magically came into the picture. Baking is a far cry from her past experience as a Travel Consultant, Wildlife Rehabilitator and Antarctic Researcher, but Renee has taken to cakes as naturally as she adapts to any challenge in life. Taking the tried & true recipes her mentor Barbara so kindly shared, and adding her own flair, Dessert Pedaler Cakery has been created with a spirit of uniqueness & a sense of adventure!
Renee hopes to bake cakes that bring a smile to your face and a memorable taste to your mind. She wants Dessert Pedaler to be as approachable as possible, with something to offer everyone in our community, as well as the tourists with whom we share our island home. In her precious free time, Renee is the HR Specialist for the Lopez Island School District, offers care of your house & furry friends, and volunteers as a Lopez Island Firefighter. She is a board member for the Lopez Animal Protection Society, Solid Waste Alternatives Program and Farmer's Market. You might find her on the tennis courts or training for the next athletic challenge. And maybe, if she's really lucky, she'll be spending the day exploring the beaches and trails of Lopez with Zandie.
